How to cook lightly fried vegetables

Vegetables like fruits are, low in calories and fats but contain good amounts of vitamins and minerals. All the green-yellow-orange vegetables are a rich source of calcium, magnesium, potassium, iron, beta-carotene, vitamin-complex, vitamin-C, vitamin A and vitamin K.

As in fruits, vegetables too are home for many antioxidants. These health benefiting phyto-chemical compounds help protect the human body from oxidant stress, diseases and cancers as well as help the body develop the capacity to fight against these by boosting immunity.

Serves: 4

Prep Time: 15 minutes

Cook Time: 10 minutes

Ready In: 25 minutes

Ingredients:

 2 tablespoons oil

1 medium onion, sliced

 2 cups carrots, chopped diagonally

2 cups broccoli florets

2 cups French beans

 2 cloves garlic, crushed

 Salt and pepper to taste

Directions:

In a cooking pot, over medium heat, put all the ingredients together and let cook, tossing so as to cook evenly for 10/15mins or until soft but not cooked through.

Serve hot

Note: Use any vegetables you have following the same directions. For example, cauliflower, peas, sugar snaps, green peppers and coloured peppers.
