Guacamole (pronounced wa-ka-molee) is an avocado based dip that has its roots in Mexico but has been adapted by people all over the world to suit their palates. In Kenya, it makes for a fun and filling alternative for ‘kachumbari’, which is mostly eaten with ‘nyama choma’. It can also be eaten with bread as a spread, ‘chapati’, ‘ugali’ and ‘sukumawiki’ and basically anything you fancy to eat it with. It can turn a boring meal into a feast. The best part of this recipe is all the ingredients are all readily available even at your local vegetable vendor.

Ingredients:

? 2 avocados, peeled and roughly mashed
? 1 onion, finely chopped
? 1 clove garlic, minced
? 1 tomato, chopped
? Lemon juice from 1 lemon
? Salt and pepper to taste

Directions:

In a large bowl, put the avocado, then stir in the onion, tomato, salt and pepper, garlic and lime juice. Chill for 30 mins to an hour.
