Chef Alis' Peri peri mayo chicken wings on a bed of lettuce served with potato wedges

Lets make some easy peri peri chicken wings. Toss the fried chicken wings in some homemade peri peri mayo sauce infusing the flavors and juices from the fried wings together with the sauce to get our homemade delicious dip to go with potato wedges and a bed of ice burg lettuce. A good treat for a high protein diet.

Peri peri chicken wings

  • 500g chicken wings
  • 1 tablespoon paprika
  • 2 tablespoons minced ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon turmeric
  • Salt

Marinate the chicken wings using all the above ingredients and set aside in the fridge for two hours to soak in the flavours.

In a hot pan, sear the wings until golden brown. Finish Off in the oven at 200 degress celsius for 5 minutes so that they cook towards the inside. (Use the same potato wedges baking tray to bake)

Potato wedges

  • 1/2kg potatoes washed and cut into wedges with skin
  • Salt and olive oil

Partly boil the potatoes in a pot with water and salt and then remove the water and place in a baking tray drizzle some olive oil and bake in a oven for 15 minutes at 200 degrees Celsius.

Mayo chicken wing dip

  • 1 Shredded ice burg lettuce for serving
  • 250g mayonnaise
  • 80g chili sauce
  • 1 tablespoon garlic/ginger minced
  • Juice of one lime

In a bowl mix the mayonnaise, garlic paste, chili sauce and lime juice then toss in the hot chicken wings to coat the sauce this will be delicious since the flavors from the chicken juices will infuse in the sauce and make the sauce even more flavorful.

 Present the coated wings on a plate using the shredded lettuce as the bed and potatoes wedges on the side, serve the remaining sauce in a separate bowl use as a dip for the potato wedges.
