Today we make chocolate gooey muffins with strawberry ice cream.

Ingredients:

Makes six servings

170g dark chocolate

110g butter

1 tablespoon of vanilla essence

2 tablespoons flour

3 eggs

4 tablespoons sugar

Pinch of salt

Method:

Preheat the oven to 200 C. Grease the muffin baking tray with some butter using a kitchen brush, then dust it with flour.

In a bowl over hot water or a microwave melt the butter and dark chocolate until the mixture combines and becomes smooth. Beat the eggs with sugar and salt using an electric hand mixer or a whisk until thick and fluffy.

Add the flour little by little, all the while mixing. Add vanilla essence. Gradually add the melted chocolate mixture and mix with a spatula. Pour the mixture into the tray greased baking tray.

Bake for 10 minutes until the edges are firm and the centre is still soft. Remove and let it cool for a few seconds. Place them on a plate and sprinkle some powdered sugar on top.

Serve immediately with a scoop of strawberry ice cream. Enjoy!
