If you are looking for the perfect meatless recipe, this cheese and tomato taco recipe is for you.

Ingredients:

500g fresh tomatoes, diced

300g cheese

1 teaspoon garlic paste

1 teaspoon garam masala

1 tablespoon oil

Salt to taste

Tomato sauce/ketchup

Dry chapatis

Method:

Cut the tomatoes into chunks. Add garlic paste, garam masala, salt, black pepper and lime to the tomatoes.

In a pan over medium heat pour the olive oil and saute the tomatoes until half cooked.

Place the chapatis on the back of a muffin baking tray. Spread a tablespoon of tomato sauce on the chapatis.

Fill the chapatis with cooked tomatoes. Sprinkle cheese and oregano on top.

Bake for 10 minutes.

For the chapatis:

1 1/2 cups flour

2 tablespoons oil

3/4 cup water

Salt to taste

Mix all the ingredients and knead into a soft dough. Divide the dough into six pieces.

Roll each each piece into a thin flatbread. Cook the flatbread in a hot pan without oil.
