Easy recipe: Fajitas

Fajitas are a fun and flavourful dish that is perfect for a family dinner or a casual gathering with friends. They are easy to make and can be customised to suit your taste preferences.

The famous Mexican dish originated in the state of Texas in the 1930s. Originally made with skirt steak, fajitas are now often made with chicken or shrimp and are served with sauteed onions and peppers, guacamole, sour cream, and fresh salsa.

To make fajitas, you will need the following ingredients:

- 1 pound of steak, chicken or shrimp

- 1 red bell pepper, sliced

- 1 green bell pepper, sliced

- 1 onion, sliced

- 2 cloves of garlic, minced

- 1 tablespoon of chili powder

- 1 teaspoon of cumin

- 1/2 teaspoon of paprika

- Salt and pepper to taste

- Olive oil

- Flour or corn tortillas

- Toppings: guacamole, sour cream, fresh salsa, shredded cheese, and lime wedges

Instructions:

Begin by marinating your protein in olive oil, garlic, chilli powder, cumin, paprika, salt, and pepper. Let it marinate for at least 30 minutes or up to overnight in the refrigerator.

Preheat your grill or a large skillet over medium-high heat. Once hot, add the protein and cook until browned and cooked through. Remove from heat and let it rest for a few minutes before slicing.

While the protein is cooking, heat a large skillet over medium-high heat. Once hot, add a tablespoon of olive oil followed by the sliced onions and peppers. Cook for about 5-7 minutes or until the vegetables are tender. Season with salt and pepper to taste.

Warm your tortillas in the microwave or in a dry skillet over low heat. Assemble your fajitas by placing the sliced protein and sauteed vegetables onto a tortilla. Top with guacamole, sour cream, fresh salsa, shredded cheese, and a squeeze of lime juice.
