Easy recipe: Grilled lobster with garlic butter

Today we make char-grilled lobster. It is delicious and easy to make, and ideal for lunch.

What you need:

8 tablespoons butter, softened

2 tablespoons finely chopped parsley

1 12 teaspoons crushed red chilly flakes

4 cloves garlic, finely chopped

Zest of 1 lemon

Salt to taste

Freshly ground black pepper

2 live lobsters (about 500g each)

14 cup olive oil

What to do:

In a bowl combine butter, parsley, chilly flakes, garlic, lemon zest, salt, and pepper and set aside.

Using a knife, split the lobster in half lengthwise. Scoop out and discard the yellow-green tomalley and break off claws.

Transfer lobster halves, shell side down, to a baking sheet and crack the claws and place them on the baking sheet.

Drizzle halves and claws with oil, and season with salt and pepper.

Heat a charcoal grill, place lobster halves, flesh side down, and claws on the hottest part of the grill, and cook until slightly charred, for 2-3 minutes.

Flip the lobster over and using a spoon, spread lobster with the garlic-parsley butter, and continue grilling for 3-5 minutes until lobster meat is tender.

Serve with a side salad and mashed potatoes. Enjoy!
