Easy recipe: Ethiopian cabbage mix

This is a national dish in Ethiopia, prepared by locals mixing vegetables together to make the perfect cabbage meal. This dish is nutritionally healthy and easy to prepare.

Despite the fact that cabbage is a widely available vegetable in the world, the Ethiopian combination of vegetables enhances the flavours in this dish, making it a popular delicacy.

This meal is convenient and diverse because it can be served as a salad for some meals and eaten as vegetables for main meals.

Here are the ingredients you need to prepare the Ethiopian cabbage:

of a cabbage (shredded and chopped)

Three whole potatoes (preferably cubed and fried)

Carrots (cubed and slightly boiled to maintain crunch)

One onion (finely cut)

Green bell pepper (chopped)

teaspoon of salt

teaspoon of black pepper powder

teaspoon of cumin powder

A pinch of turmeric powder

Two tablespoons of lemon juice

Four tablespoons of cooking oil

Method:

In a skillet, add your cooking oil and let it heat up for a few seconds. Then add the carrots and stir while it cooks.

Ensure you use a wooden spoon to avoid breaking the vegetables. Then add the potatoes and continue stirring the mixture.

Add your cabbage to the mixture and continue stirring. This should take approximately 10 seconds. Then add the onions and the green bell pepper to the mixture while you continue stirring to allow everything to blend in together.

Finally, add all the remaining spices; salt, black pepper, cumin powder, and turmeric powder (all the measurements are above) to the mixture and continue to stir your mixture for a minute or two.

Be careful not to overcook the dish, all the whole ingredients used should remain slightly crunchy while being served, unless you prefer your cabbage otherwise.

The total cooking time for this meal should not take more than five minutes on the heat.

Once ready squeeze your lemon juice as garnish. You can serve your cabbage with a bowl of rice and avocado on the side. Enjoy!
