1 lime
70 ml coconut cream
1 capsicum
1 carrot
500g kenya pishori rice
500g beef steak cut into strips
1 litre of water
Salt to taste
In a pan, put in the oil and pan sear the beef to seal the pores then add in the garlic ginger paste. Add in two cups of water then bring it to a boil until the water evaporates to ensure the meat is tender.
Once the meat is cooked add in the onions , turmeric, egg and lime juice and stir well. Add in the carrot and capsicum.
Add in the coconut cream, stir to combine. Add the rice and salt to taste. Stir and cover to cook until rice is fluffy. Serve with mango chutney.
Mango Chutney
1 raw mango sliced
1 tablespoon cayenne pepper
2 green chillies sliced
2 tablespoon tomato paste
Salt to taste
1 tablespoon vinegar
2 tablespoon oil
1/4 cup water
Put everything in a sauce pan and bring to a boil until the mixture thickens and the mangos are semi soft. Serve with the rice on the side.
