What you will need:
2 diced and blanched carrots
1 cup of boiled green peas
200g of French green beans (blanched)
2 large potatoes, diced and boiled
1 diced raw mango

1 onion, sliced
70g tomato purée
Salt to taste
1/2 teaspoon of turmeric powder
1/2 teaspoon of paprika
Juice of one lemon
1 tsp garlic and ginger paste
1 tablespoon of oil.
Coriander for garnish.
What to do:
In a pan over medium heat, add the oil and the sliced onions and sauté until golden brown. Continue to sauté, adding the garlic-ginger paste, turmeric powder and salt to taste, followed by the paprika. Mix well until fragrant.
Once the mixture is a nice brown colour, add the tomato paste and squeeze in half the lime or lemon juice. Mix well until the paste thickens. Add the boiled vegetables, starting with the potatoes, and mix well.
Then add the rest of the vegetables and cook in the paste for about five more minutes, or until the paste coats the vegetables. Squeeze in the remaining lemon juice and cook for a further five minutes.
Once cooked, serve them on their own or with your favourite staple. Enjoy!
