Easy recipe: Simple meatballs curry

Meatballs are fun and easy to make and can be enjoyed as a snack or an accompaniment to a main meal.

What you will need:

500g minced beef

Two tomatoes, blended in 1 cup water

1 medium onion, sliced

150g tomato paste

Four to five whole green chillies

Juice of one lime

1 egg

1 tablespoon garlic ginger paste

1 tablespoon curry powder

1 tablespoon ground ginger

1 tablespoon black pepper

Salt to taste

2 to 3 tablespoons vegetable oil 

1/2 bunch fresh coriander

What to do:

In a medium bowl put the minced meat. Add half of the garlic, ginger paste, half of the black pepper, half of the curry powder, salt, ground ginger, half of the lime juice and half of the coriander.

Mix with your hands until well combined. Using your hands mould some meatballs; you should get quite a number of medium-sized ones.

In a wok over medium heat, pour oil and sauté the onions until soft. Add the remaining garlic ginger paste, curry powder, black pepper, tomato paste and blended tomatoes.

Mix well and bring to a boil. Add salt to taste and whole green chillies, then go in with all the meatballs, adding one by one into the curry.

Adjust flavours with some lime juice and sprinkle some freshly chopped coriander. Cook further, until the curry thickens and the meatballs are cooked towards the inside. Serve with spaghetti.
