This is the best way for a bachelor to prepare his nyama for mbuzi on a Friday, having a cold beer or whisky besides them preferably get home earlier and try this out...actually you'll love it because it has the yummy taste. Ingredients
- Stewing lamb
- Salt, pepper
- Bouquet garni
- Potatoes
- Onions
- Celery
- Savoy cabbage or spinach
- Leeks
- Button onions
- Parsley, chopped
Method
1. Trim the meat and cut into even pieces. Blanch and refresh.
2. Place in a shallow saucepan, cover with water, bring to the boil, season with salt and skim. If tough meat is being used, allow 1/2-
1 hour stewing time before adding any vegetables.
3. Add the bouquet garni. Turn the potatoes into barrel shapes.
4. Cut the potato trimmings, onions, celery, cabbage and leeks into small neat pieces and add to the meat, simmer for 30minutes.
5. Add the button onions and onions simmer for further 30minutes.
6. Add the potatoes and simmer gently with a lid on the pan until cooked.
7. Correct  the seasoning and skim off all fat.
8. Serve sprinkled with chopped parsley.
Key point • Keep the meat and vegetables covered with liquid during cooking, to keep the dish consistent and tasty.
• Add pepper if necessary and if you like it.
Healthy eating tips • Trim as much fat as possible from the stewing lamb.
• Use the minimum amount of salt.
• Serve with colourful seasonal vegetables to create a 'healthy' dish.
• Use of carrots and spinach is ones option.
Try something different
- To our kienyeji way alternatively, a more modern approach is to cook the meat for 1and1/2 hours or to 2hours until tender, then add the vegetables and cook until tender.
- Optional accompaniments include Worcester sauce or pickled red cabbage
- Not forgetting our African ugali perfect for the meal.
