Recipe: preparing a hearty Chicken Kiev

Ingredients

-4 chicken breasts

-3 chopped garlic cloves

-Juice of one lemon

-1 tbsp chopped parsley

-1 small sundried tomato, finely chopped

-230g slightly softened butter

For the coating

-3 tbsp flour

-5 slices white bread made into breadcrumbs

-A little chopped parsley

-1 large egg, beaten

Procedure

1 Heat the oven to 180C, Gas Mark 4. Make a pocket in the chicken breasts by slicing a small piece out of the centre. Mix the butter, garlic, parsley, lemon juice and sundried ­tomato. Now stuff the mixture equally ­between the chicken breasts.

2 Roll the chicken breasts in the flour, then into beaten egg, then the breadcrumbs and parsley, ­coating them completely.

3 Heat the oil in a frying pan, brown the breasts on all sides, then put them on to a baking tray and cook for 20mins or until cooked through.
