Happy holidays! Today we make viazi vya nazi, (potatoes in coconut sauce) an authentic Swahili meal.

What you will need:

1kg sliced potatoes

Half kg mutton, boiled

1 large onion, sliced

1 tomato, roughly cut

130 ml coconut cream

1 lime

3 green chilies

1 teaspoon garlic-ginger paste

1 teaspoon turmeric

1 teaspoon black pepper

2 tablespoons of oil

Salt to taste

500ml water

Coriander

What to do:

Drizzle oil in a hot non-stick pan. Throw in the onions and sauté until soft. Now add the garlic-ginger paste, tomatoes, chillies, turmeric and black pepper. Add in the boiled mutton and mix well. Then put in the potatoes and sprinkle the salt.

Add half of the coconut cream and water, and cook until the water has completely reduced and potatoes are cooked.

Use a small knife to test the tenderness of the potatoes - you do not want to serve half-cooked potatoes (ensure you do not overcook them).

Pour in the lime juice and the remaining coconut cream. Let it cook for another five minutes over medium heat.

Garnish with coriander. Serve as a meal on its own, with a side of lime pickle or any pickle of your choice. Enjoy!
