INGREDIENTS:

1 cup wild rice, cooked

2 teaspoons vegetable oil, for light frying

8 chicken thighs, with the skin

Salt and black pepper to taste

2 cups seedless grapes

1 tablespoon fresh thyme

DIRECTIONS:

Pre-heat your oven to 4000 F

Season the chicken with salt and pepper then lightly fry the chicken until golden brown but not cooked through. Once done, transfer the chicken to a shallow baking tray. Roast until cooked through (for about 12/15mins)

Add the grapes and thyme to the drippings in the cooking pot and cook, over medium heat tossing occasionally, until the grapes begin to bust (about 5/7mins)

Serve with the wild rice and tossed french beans.

 

Note: You can use regular rice
