Cocktail bar: The courgette martini (Photo: iStock)
The Courgette Martini Cocktail is a modern, creative variation of the classic martini. While the martini itself has a rich and debated history stretching back to the late 19th century, the courgette (or zucchini) martini is a more recent invention, a product of contemporary mixology that experiments with vegetables and other unconventional ingredients.
INGREDIENTS:
1 courgette – it needs to be coarsely grated.
2 Lemons – for the juice.
2 tablespoons of Caster sugar.

Ice Cubes.
Mint leaf- to garnish.
HOW TO MAKE IT:
STEP 1
Take your coarsely-grated courgette and mix it with lemon juice and sugar. Leave it to combine for one hour and during this time, you can prepare your martini glass by placing it into the fridge until it chills.
STEP 2
Then strain the courgette mixture into a pitcher using a sieve. Then fill the cocktail shaker with ice cubes and include the courgette syrup from the pitcher and add vermouth and gin. Stir gently until it is perfect for you, then strain into your chilled glass. Now, garnish with a mint leaf and serve your delicious Courgette Martini cocktail.
