For the love of chicken and new recipes we present to you the lemon and herb chicken. Try this and we promise you won’t regret it.

What you will need:

1 kg whole chicken, cut into 8 pieces

1 teaspoon dried mint herb

1 teaspoon oregano

1 teaspoon dried basil

1 teaspoon garlic mince

1 teaspoon ginger mince

1 teaspoon paprika

1 onion, diced

2 chicken bouillon cubes

Juice of 2 lemon

100g tomato paste

2 tablespoons oil

2 teaspoons brown sugar

1/4 cup water

Salt to taste

What to do:

Wash the chicken well, marinate with lemon, garlic, ginger and salt. In a non-stick pan over heat, add the oil and pan sear the chicken until golden brown on each side. Then add in the diced onions and mix well.

Once the onions are soft throw in the herbs, starting with the mint, oregano then basil. Mix well. Now add the paprika and crumble in the chicken bouillon cubes.

Continue to cook until the flavours combine well. Pour in the tomato paste and mix well. Add the water and bring to a boil. Cook until the liquid has reduced.

Pour in the juice of two lemons and mix well. Finish off with the brown sugar to get that caramelisation and a touch of sweet and sour in the mix.

Cook for 5 more minutes. When the oil pops up as it boils and the sauce is thick, your chicken is ready. Serve with roasted potatoes. Enjoy!
