How to prepare Swahili goat pilau [Courtesy, Files Standard]

Ingredients:

2 cups basmati rice

6 medium-sized potatoes (peeled and halved)

2 onions sliced

3 cardamom pods

1/2 teaspoon whole black pepper2-3 sticks whole cinnamon

1 kg goat meat (boiled)

1 tablespoon garlic ginger paste

2 tablespoon oil

1 teaspoon ghee (optional)3 cups water or stock from the boiled goat meat

Salt to taste

Method:

In a pot or sufuria over medium heat put the oil and ghee.

Add the onions and saute for a minute - do not brown them.

Now add the whole spices, mix and saute until fragrant.

Add the garlic ginger paste and potatoes and cook for about two minutes.

Add the boiled goat meat and stir well until all flavours combine, then add the rice and mix well.

Pour in the water, and bring it to a boil.

Adjust seasoning with salt and cook until it is almost dry. Cover and let it steam on low heat for about 15 minutes, then fluff up the rice.

Serve with kachumbari and chilli. Enjoy!
