Let’s make some delicious Swahili spicy chicken. This recipe is super delicious but very easy to whip up. The chilli flakes give it a great punch and the sliced fresh ginger just balances the entire meal with a great fresh feel on the palate.

What you’ll need:

1 kg chicken, cut into eight

50g tomato paste

2 tbsp ginger, finely sliced

2 tbsp garlic paste

4-5 green chilies

1 bunch fresh green coriander

1 teaspoon crushed cumin seeds

1 teaspoon black pepper

1 teaspoon crushed red chili

1/2 teaspoon fresh turmeric minced

1 tablespoon chicken mchuzi mix

Salt to taste

100ml plain buttermilk (lala)

2 tablespoon oil

Juice of 1 lime

What to do:

Heat oil in a wok and add the garlic paste, stir fry for a few seconds. Add crushed cumin, black pepper stir well.

Now add chicken, cook for 1-2 minutes.

Add whole green chilies and fresh coriander and mix it well.

In a separate bowl, mix tomato paste and buttermilk, salt, crushed red chili, fresh turmeric and mix well then add to the chicken. Dilute the mchuzi mix in 1/4 cup of water and then add into the chicken mixture as well.

Cook covered with lid till the chicken is almost done. Add lime juice and cook until the liquid has evaporated and thick.

Garnish with sliced ginger, green chilies and fresh coriander. Serve hot with chapati or naan.
