While chicken may be a luxury in these lean times, if you decide to splurge on one, you can make one chicken work for several dishes.

Dish 1: Roast chicken with some potatoes and vegetables in the same pan. The chicken fat and juices will add extra flavour to the vegetables without you having to add any cooking oil. Save the vegetable peelings.

Dish 2: Strip the chicken and chop up any leftover chicken you have and add the pieces to a vegetable pilau. Dishes like pilau taste even better after a day so this is a great recipe for leftovers.

Dish 3: Boil up the chicken with saved up vegetable peelings to make a chicken broth which you can drink straight as a soup or add to lentils or beans for added flavour.
