A quick and simple-filling lunch. With ingredients that children like.

With the children on holidays, sometimes coming up with an easy-filling meal can be a challenge.

Potatoes and eggs. What can be more filling than that? Serve this with a glass of milk, or a banana and avocado smoothie and the children will be good until dinner time. The one great thing about this recipe, it will cost you just about Sh300. How cool is that?

Add some leftover meat, sausage or bacon to it when frying the onions and potatoes and garnish with cheese if you so desire.

Ingredients:

4 tablespoons vegetable oil

200g potatoes, thinly sliced

1 large onion, thinly sliced

2 tomatoes, skinned, de-seeded and chopped

2 spring onions, chopped

4 eggs

Salt and pepper to taste

Directions:

Heat the vegetable oil in a large deep frying pan, over medium heat.

Sprinkle the sliced potatoes lightly with salt and pepper then fry until they start to turn golden brown. Stir in the onions, stirring occasionally until the onions have softened and the potatoes are cooked through and have a golden brown color.

Meanwhile, beat the eggs, add some salt and pepper to taste then pour them into the pan and stir gently to combine.

Reduce the heat to low and allow the eggs to cook until they begin to brown on the bottom and sides.

Flip the eggs and allow to cook until brown on the bottom and sides and the eggs are set.

Garnish the omelette with the chopped tomato and spring onion.
