Serves 4

Ingredients 3 eggs Salt to taste 1onion, finely chopped 2 tablespoons vegetable oil 1/2 kg cooked rice 2 cups pre-boiled peas

Directions:

Lightly beat the eggs with a pinch of salt

In a deep frying pan or wok fry the onions, until clear (not cooked through)

Add the beaten egg and scramble

Add the rice and stir until the rice grains are all separated, you can add some vegetable oil if need be

Add the peas continue to stir until cooked.

Serve with soy fried beef
