Let’s make some delicious batter fried tomatoes. These work with either green or red tomatoes. They are such a fun way of making your tomatoes tastier and creating a snack out of few ingredients.
What you will need:
1kg tomatoes
1 cup all-purpose flour

1 egg
Salt to taste
1/4 cup vinegar
Oil for frying
What to do:
In a bowl, put the flour, then add the curry powder, add salt and the egg. Go in with a quarter cup of vinegar and mix well until the mixture is light and has a pancake consistency.
Cut the tomatoes into slices longitudinally getting at least three slices per tomato; dip the tomatoes into the batter mixture.
Place a frying pan over medium heat, add in the oil and start frying the battered tomatoes for about two minutes on each side. Keep on turning.
Once the tomatoes are golden brown, remove from the oil and place on a kitchen towel or serviettes to drain extra or excess oil.
Serve with your favourite chutney or tomato sauce. This can be a snack that can be enjoyed on its own; crusted on the outside and super moist on the inside with all the tomato goodness flavours.
