Cornish cheese and onion scones
Ingredients
- 225g self-raising flour
- 55g cubed butter
- 30g grated Cornish cheddar cheese
- 150ml milk
- ¼ tsp cayenne pepper
- 1 tbsp grated onion
- A pinch of salt
- 1 egg yolk and a little milk, whisked
To serve
- A few big wedges of cheese
- Your favourite pickle
Directions
1. Heat the oven to 220C, gas mark 7.
2. Fry the onion in a little butter until soft and then allow to cool. Mix togetherthe flour, salt and cayenne pepper and rub in the rest of the butter.
3. Add the grated cheese and milk and mix to a soft dough.
4. Place on a floured surface and lightly knead, then cut into 2cm thick rounds and lay on a baking sheet.
5. Brush with the milk and egg mix, and bake for 13-15 mins until risen and golden.
6. Serve with loads of melted cheese and whatever pickle you chose.
