This weekend, let's get a little creative with peppers. Its nothing out of this world, you will need a couple of bell peppers, rice and minced meat. This combination works wonders on the palate.

Ingredients


500g mince beef

50g tomato paste
1 teaspoon garlic ginger paste 
1 teaspoon Garam Masala 
Salt to taste 
1 teaspoon oregano
Coriander for garnish 
50g grated mozzarella
1 Red large capsicum (sweet pepper)
1 green large capsicum
1 yellow large capsicum 
Juice of one lime 
1 bowl cooked rice about 150g
1 tablespoon vegetable oil
1/2 cup vinegar

 In a pan, over medium heat put a tablespoon of oil and pour in the garlic then add in the mince meat, go in with some oregano, Garam Masala and salt to taste.
Add in lime juice and tomato paste

Let it cook for 10 minutes,
While the mince is cooking trim the bottom of the peppers so that it can stand on its own then slice the top and remove the seeds to create space for the filling.

Take a spoon and layer the rice half full in the peppers and fill the top with the cooked mince beef.

Put the stuffed peppers in a baking tray and pour the vinegar into the tray and bake in the oven at 180 degrees Celsius for 55 minutes, then remove and top with cheese and put it back in the oven for five more minutes. 

Garnish with black pepper and coriander. Serve.
