Easy recipe: Roast potatoes with spicy chicken

Happy new month!

As a new month begins, how about we start it off with a new recipe as well. Let us make this easy potato and chicken dish, fit for the festive season!

What you will need:

1 chicken, cut into quarters (do not remove skin)

1kg potatoes, peeled and halved (parboiled)

4 carrots, sliced

2 onions cut into chunks

2 bell peppers, cubed

1 teaspoon garlic powder

1 teaspoon black pepper

1 teaspoon onion powder

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 teaspoon oregano

Salt to taste

Juice of one lemon

1 tablespoon olive oil

What to do:

In a bowl add the spices and salt and mix thoroughly. Pat the chicken dry and rub half of the blended spices all over it. Squeeze the lemon juice on the chicken and set it aside.

Put the potatoes, carrots, capsicum and onions in a casserole dish.

Now sprinkle the remaining half of the spices and mix well. Place the marinated chicken on top of the potatoes and vegetables.

Then sprinkle olive oil over the chicken and potatoes. Roast in the oven at 200°C for about one hour and 15 minutes, or until when the potatoes are crispy and golden brown and the chicken is done on the inside.

 You can enjoy this delicious meal with a salad or simply on its own.
