Easy recipe: Chicken wings with okra

Let’s make my simple and delicious chicken wings with okra. These chicken wings are simple to make. You can serve them with brown rice and a side salad.

If you don’t want rice, you can always add extra salad and enjoy it with your favourite yoghurt blend and herbs. Such a lovely and easy meal to whip up.

What you will need:

1kg chicken wings (drumette and wingette)

1 tablespoon garlic ginger paste

Juice of 1 lime

1 teaspoon Cayenne pepper

1 stick rosemary

1 teaspoon oil

1/4 cup tamarind extract

1 onion sliced

1/2kg Okra (lady fingers)

Salt to taste

What to do:

Using a knife, separate the wings into two to get a drumette and wingette. Marinate with the garlic ginger paste, lime juice, cayenne pepper, rosemary, tamarind and salt to taste.

Let it stay with the marinade for one hour then lay the Wings flat on a baking tray. Roast it in the oven at 200 degrees Celsius for about 45 mins or until golden brown and cooked towards inside.

Once brown, turn the wings and reduce heat to 150. Add the okra and onions and cook for another 15 minutes.

Add some extra lime juice and enjoy, serve it with brown rice and a side of salad with some yoghurt mixed with herbs if you wish.
