Easy recipe: Rich Kenyan beef stew

Happy New Year! Today we make a super thick and delicious Kenyan beef stew.
What you will need:
1/2 kg beef, cubed
1/4 kg potatoes, cubed
2 medium-size carrots, diced
1 onion, sliced
ALSO READ
2 to 3 tomatoes, chopped
2 tablespoons tomato paste
1 tablespoon chopped fresh coriander
1 tablespoon mchuzi mix
1/4 teaspoonful cinnamon
2 tablespoons cooking oil
1/4 cup tamarind sauce
Salt and pepper (optional)
What to do:
Boil the beef in a litre of water until tender. Add the potatoes and carrots. In a separate pan, drizzle the oil and let it heat, then throw in your onions. Let it cook to a golden colour.
Sprinkle the cinnamon and mix, then add the tomatoes and let them cook. Dilute the mchuzi mix in half a cup of water and mix well. Now add in the mixture and the tomato paste and stir well.
Put in the boiled beef with its broth and the potatoes and carrots into the cooked paste and mix. Add in the tamarind, season with salt and pepper (optional) and let it cook on low heat until it thickens. Once ready, garnish with coriander. Serve with ugali and kachumbari. Enjoy!
