Vegetables like fruits are, low in calories and fats but contain good amounts of vitamins and minerals. All the green-yellow-orange vegetables are a rich source of calcium, magnesium, potassium, iron, beta-carotene, vitamin-complex, vitamin-C, vitamin A and vitamin K.

2 tablespoons oil
1 medium onion, sliced
2 cups carrots, chopped diagonally
2 cups broccoli florets
2 cups French beans
2 cloves garlic, crushed
Salt and pepper to taste
In a cooking pot, over medium heat, put all the ingredients together and let cook, tossing so as to cook evenly for 10/15mins or until soft but not cooked through.
Note: Use any vegetables you have following the same directions. For example, cauliflower, peas, sugar snaps, green peppers and colored peppers.
