2 tablespoons tamarind paste
1/2 cup plain yoghurt
2 tablespoons oil
1 bunch of curry leaves (limru)
Salt to taste
What to do:
In a hot pan, add the oil and sauté the onions until golden brown. Add the garlic paste, curry leaves and turmeric powder. Sauté until fragrant.
Add the lime juice, tamarind and yoghurt and mix well to coat the flavour.
Bring to a boil, then add the tomato paste and salt and let it boil for the next 10 minutes or until the sauce is thick and coats the chicken.
Serve your portion in a bowl with a side of rice and a little 'raita', then finish with some soft lettuce on the side as a garnish. Enjoy this hearty healthy bowl.
For the raita:
1 cucumber diced
200ml plain yoghurt
Mix the two and season to taste with a little black pepper if needed.
