Are you craving some comfort food? These easy chicken dumplings are a warm, hearty hug in a bowl. This recipe is perfect for beginners and seasoned cooks alike, offering a delicious homemade meal with minimal fuss.

Ingredients:

For the chicken:

1 tablespoon cooking oil

1 boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1 medium onion, chopped

2 carrots, peeled and chopped

2 celery stalks, chopped

4 cups chicken broth

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

Salt and pepper to taste

For the dumplings:

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

3/4 cup milk

2 tablespoons melted butter

Instructions:

Heat the oil in a large pot over medium heat. Add the chicken and cook until browned on all sides.

Add the chopped onion, carrots, and celery. Cook until the onion is softened for about 5-7 minutes.

Next, pour the chicken broth into the pot. Add the dried thyme, rosemary, salt, and pepper.

Bring to a boil, then reduce heat and simmer for 15-20 minutes or until the chicken is cooked through and tender.

While the broth simmers, prepare the dumplings. In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, combine the milk and melted butter. Pour the milk mixture into the dry ingredients and stir until just combined. Do not overmix.

Increase the heat to medium. Drop spoonfuls of the dumpling batter into the simmering broth.

Cover the pot and simmer for 15-20 minutes or until the dumplings are cooked through and fluffy. Enjoy!
