
Let’s make some delicious and very easy to make kofta kebabs drizzled with paprika olive oil and served over hummus for Iftar. Such a hearty treat, let’s get cooking.
Here is what you will need for the kofta kebabs:
500g mince meat
1 teaspoon paprika
1 teaspoon beef Mchuzi mix
1 tablespoon garlic ginger mince
1 tablespoon grated onion
3 Royco beef cubes
Vegetable oil for frying
What to do
Mix everything in a bowl until well combined then mold your kebabs using the palm of your had, removing any extra liquid by squeezing your palm. This way you will also get a perfect shape of koftas. Once you have molded all the koftas, pan sear them in a non stick pan over medium heat until golden and cooked on both sides towards the inside. Set aside and make the hummus.
For the hummus
To make the hummus you will need:
200g boiled hummus
4 garlic cloves
1 tablespoon tahini,
Salt to taste
3 tablespoons white vinegar
4-5 tablespoons olive oil.
Method
Blend all the above ingredients until smooth. Add 2-3 ice cubes and blend again. This will ensure you have smoothest and silky hummus.
Once ready, pour the hummus into a plate, arrange the koftas on top and pour some sizzling hot olive oil with paprika mixed together. Enjoy as it is, with naan bread or with chapatis.
