
Ramadan Mubarak! Here is a delicious veggie Ramadan dish.
What you will need:-
1 kg potatoes, cut into cubes (boiled)
1 teaspoon garlic ginger paste
2 tablespoons oil
3 eggplant, sliced
1 teaspoon curry powder
1 teaspoon paprika

1/2 teaspoon turmeric powder
1/2 teaspoon black pepper
1 sweet pepper, cubed
1 tomato, roughly cut
Salt to taste
50g tomato paste
1 cup of water
Juice of 1 lemon
100ml coconut cream
What to do:
In a pan over medium heat, add in your oil and then go in with the eggplant. Sauté until golden brown, then go in with your spices: the black paper, turmeric, curry powder and paprika.
Continue to cook until fragrant; add in your garlic paste and mix well. Add the sweet paper and give it a good mix.
Once it’s combined well, go in with your tuna and then add in the rough cuts of tomatoes. At this point, you want to go in with your tomato paste and then add about one cup of water.
Season with salt and bring to a boil. Once it bubbles up, reduce heat to low so that it simmers and slow cooks. Go in with the juice of one lemon and continue to cook until thick and the veggies are soft.
Add in the potatoes, place in a baking tray and bake for 15 minutes at 180°C. Drizzle the coconut cream and serve. Enjoy this with either ugali or chapati.
